Carpe Diem: “Enjoy yourself while you have the chance”

It is the promise made by the Carpe Diem, in which chef Julien Bichot proposes a journey between gastronomy and bistronomy based on an environmentally friendly high-quality, refined and creative cuisine.
The chef, very involved in the sustainable development, promotes local products and direct sales from the producer to the consumer to prepare fine and coloured dishes combining past and modern flavours.
Let’s mention, to stimulate your palate, some spring-summer dishes:
- pressed duck foie gras de canard, smoked mackerel with hay of the Crau, seaweed brioche
- Grenoble-style grilled scallops and candied chicory with orange juice
- apple variations, green apple and curry sorbet
La Tour d'Argent, Robuchon, Le Pavillon Ledoyen, Bistrot Papillon or, more locally, Le Dauphin in Breuil-en-Auge and Le Bréard in Honfleur contributed to the training of the chef.
