"Nowadays, people want to consume differently: they want to eat good, nice, healthy, friendly food in different moments of the day.” 5 major culinary trends are identified:
- Putting an end to food waste: ugly fruits and vegetables, use of stems in cuisine, zero waste.
- Consumers are more aware of what they eat: they want their food to be local and animal breeding traceable, they strive for sustainable fishing, farming and breeding techniques and buy as little as possible processed products (success of organic products, sustainable agriculture, short circuits, varied and healthy street food,…).
- Eating local products fascinates French people and make them feel safe: for 60% of French people, Made in France products are a guarantee of quality.
- Recalling old cooking traditions: consumers love tasting traditional recipes, flavours and recipes adjusted to current times through safe and recognizable rather than revolutionary products.
- The passion for cooking and the success of cooking workshops is back: following the principle of “good food, healthy food”, cooking workshops represent a real trend and fascinate many food lovers (cuisine kits, home chefs,..).
